Fancy but easy to do. Leek, pears, prosciutto and goat cheese are a pairing made in food heaven.

Ingredients
- 1 tbsp Butter
- 4 whole Leeks, white and light green parks only, sliced
- 2 teaspoons White Granulated Sugar
- 1 whole pear, chopped
- 1 tbsp Dijon mustard grains
- 3 teaspoons apple cider vinegar
- 6 slices Sourdough bread, toasted
- 6 tablespoons Goat cheese
- 6 slices Prosciutto
- 2 strands Fresh thyme
Preparation
Over medium heat, melt the butter and add the leeks. Cook for a few minutes until they begin to become translucent and tender. Add the sugar, then the pear. Increase the heat and cook until the mixture is tender, pureed and lightly browned.
Add the mustard and vinegar, stir and simmer for a few minutes until the liquid is cooked. Let cool.
Spread the bread. Spread a little goat cheese on each slice, then the pear/leek mixture, then garnish each with prosciutto and a few shavings of fresh thyme. Serve and enjoy!
