Cook chicken to perfection with this Instant Pot recipe!

- 1 cup raw quinoa
- 1-½ cup Water
- 1-½ pound Chicken
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 teaspoon Cumin
- 1 teaspoon garlic powder
- 1 teaspoon Dill
- 1 teaspoon Paprika
- 1 teaspoon Dried oregano
- ½ teaspoon Coriander
- 1 whole Cucumber, diced
- 1 cup Cherry tomatoes
- 1 box (size 15 oz) chickpeas, drained and rinsed
- 1 cup Kalamata olives
- FOR THE TZATZIKI SAUCE:
- 1 cup Greek yogurt
- 1 tbsp Lemon juice
- 1 tbsp Dill
- 1 teaspoon Salt
- ½ teaspoon Pepper
Preparation
Add quinoa and water to the Instant Pot. Place the chicken on top and season with salt, pepper, cumin, garlic powder, dill, paprika, oregano and cilantro. Close Instant Pot, set knob to seal and cook on high pressure for 10 minutes. Once the pressure cooker has completed its cycle, release the pressure and remove the lid. Air quinoa, remove chicken and cut into slices.
Meanwhile, prepare the tzatziki sauce by mixing all the ingredients. Set aside while the chicken cooks.
To assemble the bowls, first place the quinoa and chicken in a bowl. Garnish with cucumber, tomatoes, chickpeas and olives. Drizzle with tzatziki sauce and serve.
