Chicken skewers full of flavor! Let the marinade do the work before tossing it on the grill or in the oven!

Ingredients
- 4 Boneless skinless chicken breasts
- 1 cup Peanut Butter
- ½ cups Soya sauce
- ½ cups Sweet chili sauce
- ¼ cups brown sugar
- ¼ cups Fresh lime juice
- 3 cloves Garlic
- 2 Red peppers
- 8 Green onions
- 1 bunch Fresh coriander
- Salt and pepper
- Red bell pepper
- Unshelled peanuts

Method:
Start with the marinade- Combine the peanut butter, chili sauce, soy sauce, brown sugar, lime juice, garlic (finely chopped), finely chopped cilantro (about 1/3 cup), onions finely chopped greens, salt, black and red pepper in a gallon zip-top bag or large container with lid. Next, cut the chicken breast into about 2-inch pieces and add to the marinade – make sure it’s completely submerged. Leave to marinate in the refrigerator for at least one hour to overnight. While marinating, take 8-12 cooking skewers and soak them in water, this will prevent splintering when the skewers cook. Take the bell peppers and cut them into 1/2 inch pieces. Chop more cilantro and peanuts if you want to garnish. Now, when the chicken has marinated for at least an hour or more, it’s time to assemble the skewers. Take 2-3 chicken cubes and thread onto the skewers then slide onto a piece of bell pepper, repeat these steps again. Once you have all the skewers assembled, they are ready to put on the grill over high heat. Turn them over on the grill every 2-3 minutes or so. They’re done when you cut them and the juices run clear.
Baking method:
Preheat oven to broil on high. Line a baking sheet with aluminum foil. Place the assembled skewers on the tray and in the oven. Grill for about 5 minutes before turning over and sautéing for another 5 minutes. Be sure to cut and check that the chicken is cooked through before serving.
