- 8 slices Bacon
- 1 Red bell pepper, seeded and chopped
- 1 Yellow onion, seeded and chopped
- 1 teaspoon Olive oil
- 5 whole 12 inch flour tortillas
- 8 large eggs
- ½ cups Milk
- 15 ounces, weight Canned Refried Beans
- 1 Large ripe avocado, peeled, seeded and sliced
- FOR THE TOPPING (optional):
- Mexican Hot Sauce
- pico de gallo
- Fresh cilantro, leaves picked from stems
- Sour cream or Mexican cream
- Shredded Cheddar Cheese Or Mexican Cojita Cheese
- Pickled or fresh jalapeno
Preparation
In a large non-stick skillet, sauté bacon over medium heat until crisp. Remove bacon from skillet (reserve bacon grease) and transfer to a paper towel-lined plate. Drain and reserve.
In another smaller nonstick skillet, sauté red pepper and onion in olive oil until edges of onion are lightly browned; Remove from heat and set aside.
Meanwhile, stack flour tortillas on top of each other and cut into 2-inch squares using a sharp knife. Return the large skillet with the reserved bacon grease to the stove and lower the heat to medium. Add the cut tortillas a handful at a time and sauté in the bacon drippings until lightly browned, flipping each chip with tongs to brown both sides. Remove the fries to a paper towel-lined tray and continue cooking the rest of the fries until all the fries are golden brown.
In a mixing bowl, beat the eggs with the milk using an immersion blender or an electric hand mixer until fluffy. When the last fries are done, return all the fries to a large skillet. Add the precooked red pepper and onion and stir to combine. Add the beaten eggs all at once and scramble the whole mixture all at once until the eggs are set. Serve with heated refried beans, reserved bacon strips, sliced avocado and other toppings.
