This coleslaw is a cinch to put together if you have a food processor with a slicing blade. It goes so well with grilled meats and pulled pork sandwiches.

Ingredients
- 1 head (medium) Cabbage, any color (I like to use half green, half red)
- 1 Carrot
- 1 tbsp Lemon juice
- 1 tbsp Olive oil
- 1 tbsp Dear
- 1 teaspoon Dijon Mustard
Preparation
Grate cabbage and carrot and place in a large serving bowl. Whisk together the remaining ingredients and toss with the salad, coating everything evenly. Refrigerate until ready to serve.
