Bran and honey granola with almonds and apricots.

- 4 cups Raw rolled oats
- 2 cups Bran
- 2 teaspoons Ground cinnamon
- 1 teaspoon Mixed spices
- ½ teaspoon Ground nutmeg
- ½ teaspoon Ginger
- 2 tablespoons Dear
- ¾ cups coconut oil
- ½ teaspoon coarse sea salt
- ¾ cups Almonds
- ¾ cups Cashew nut
- ¼ cups Sun-flower seeds
- 1 cup dried apricots
Preparation
Set the oven to 150°C (300°F).
Place rolled oats, bran, spices, honey and coconut oil in a large bowl and mix well. Pour onto a baking sheet and spread evenly. Sprinkle the granola with salt and bake for about 15 minutes in the middle of the oven. Turn the granola with a wooden spoon and cook for another 10 minutes. Flip again and cook for another 10 minutes until golden brown.
Stir whole walnuts and sunflower seeds into granola. Bake another 20 minutes, turning after 10 minutes to lightly toast the nuts and seeds.
Once the granola is cooked and golden brown, stir in the coarsely chopped apricots and let cool. Store in an airtight container in a cool place.
Note: if you want to make a large batch, simply double the recipe and cook the granola in two baking sheets either at the same time, alternating the sheets between the middle shelf and the bottom shelf, or one after the other.
