Ingredients
- 3 whole Chicken breasts, boneless or deboned
- 2 teaspoons Salt
- ¾ teaspoons Pepper
- 2 cups Chopped onions
- 2 cups Celery, chopped
- 2 cups Chopped carrots
- 4 cloves minced garlic
- 1 tbsp Dried parsley
- 3 whole bay leaves
- 2 tablespoons Chicken Bouillon Paste
- ¾ cups Uncooked rice
Preparation
Place the chicken breasts in a large pot. Add 6 cups of water, or enough to cover the chicken, and add salt and pepper. Bring to a boil over high heat, reduce heat and simmer for 45 minutes.
Remove the chicken from the pot, let cool slightly and shred or cut into pieces.
Add the onions, carrots, celery, garlic, parsley and bay leaves to the pan. Pour in an additional 6 cups of water or enough water to fill the pan about ¾ full. Stir in the chicken broth paste, lower the heat, but bring to a simmer and cook for 20 minutes.
Add chicken and uncooked rice. Bring to a boil, cover, reduce heat and simmer an additional 15 minutes, or until rice is tender and broth is desired consistency.
