These homemade wedges are very easy to make. A favorite in our family. You can use any spices and herbs you like. I use Herbe de Provence or Italian seasoning.

- 6 Potatoes
- Olive oil, as needed
- Salt and pepper to taste
- ½ teaspoon Herbs (Herbes De Provence, Italian Seasoning Or Your Favorite Herbs)
Preparation
Heat the oven to 375ºF. Wash and dry the potatoes.
Cut the potatoes in half. Cut each potato half in half, then cut in half again. You should end up with 8 long wedges from each potato.
Spread parchment paper on a baking sheet. Place the potatoes on the platter. Pour in the oil and sprinkle with salt, pepper and herbs. Mix with your hands so that all the quarters are covered. Spread in a single layer.
Place in the oven and cook for 1 hour or until the potatoes are golden brown and cooked. Enjoy!
