Homemade chicken and waffle bites will make you the hit of the party! Sweet and spicy in every bite, you’ll want to make them again and again.

Ingredients
- FOR THE CHICKEN AND JALAPENO SLICES:
- 2 books Chicken fillets, cut into bite-sized pieces
- 1 cup Buttermilk
- 1 tbsp Hot sauce of your choice (more or less, depending on your preference)
- 1 Large egg, lightly beaten
- ½ cups Flour
- ¾ cups Panko breadcrumbs
- ¼ cups cornmeal
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Paprika
- 1 teaspoon Cayenne pepper
- 1 teaspoon seasoned salt
- ½ teaspoon Freshly ground black pepper
- 2 Jalapenos, sliced (to reduce heat, remove seeds)
- Canola oil, for frying
- FOR THE WAFFLES:
- 2 cups Flour
- 2 tablespoons Sugar
- 1 tbsp baking powder
- ¼ teaspoons Salt
- 2 large eggs
- ⅓ cups Canola oil
- 1-¾ cup Milk (I use 2%)
- 1-½ tbsp Butter
- 1 teaspoon Vanilla extract
- Honey for watering
Preparation
For the chicken and jalapeno slices:
Add the chicken breasts, buttermilk and hot sauce to a bowl. Leave to marinate in the fridge for 1 hour. Remove from refrigerator. Add the beaten egg, mix well and leave to come to room temperature for 10 minutes before frying.
Combine flour, panko, cornmeal, onion powder, garlic powder, paprika, cayenne pepper, seasoned salt and black pepper in a bowl. Lightly dip the jalapeno slices in the flour and spice mixture. Reserve the jalapeno slices.
Drain the buttermilk mixture from the chicken. Dip the chicken pieces completely into the Panko mixture.
Heat the oil in a large skillet over medium-high heat. Add the jalapeno slices and cook for about 2 minutes on each side. Remove and drain on absorbent paper. Add the chicken pieces to the oil and cook for about 4 minutes on each side, until the chicken is browned on the outside and cooked through. Remove and drain on absorbent paper
For the waffles:
In a large bowl, add flour, sugar, baking powder and salt.
In another bowl, add the eggs, oil, milk, butter and vanilla extract. Whisk well to lightly beat the eggs and fully combine the mixture.
Pour the wet ingredients into the dry ingredients and fold slightly. Do not overmix, otherwise the waffles will be too dense
Bake waffles according to waffle maker instructions.
Cut the waffles into quarters. Top each quarter with a chicken breast and a slice of jalapeno. Drizzle with honey.
