Aussie Bites is a fun little snack filled with chewy seed pieces and dried fruit and is perfect for little hands or adult lunch boxes or snack bags.

Ingredients
- 1 cup Oatmeal
- ⅓ cups Oatmeal
- ¼ cups Ground flax seeds
- 1 tbsp Sun-flower seeds
- 2 tablespoons Grated coconut
- 1 teaspoon Chia seeds
- 1 teaspoon raw quinoa
- ¼ teaspoons Baking soda
- 1 pinch Sea salt
- ½ cups Chopped dried fruits (like apricots and raisins)
- ¼ cups Softened butter
- ¼ cups Dear
- 2 teaspoons Vanilla extract
- 1 Egg white
Preparation
Preheat the oven to 350ºF. Prepare a mini muffin pan with nonstick spray.
Combine first 9 ingredients (oatmeal through salt) in medium bowl. Add the dried fruit, butter, honey, vanilla and egg white. Mix everything well, using your hands helps! Your mixture should look like oatmeal cookie dough.
Fill about 16 muffin cups with batter, press and fill to top. Bake for about 10 minutes or until the sides are golden brown. Let them sit for 10-15 minutes before trying to remove them from the pan.
Let them cool before eating. Store in an airtight container at room temperature. They should last several days. In fact, I like them better the day after they are made!
