An easy Thanksgiving and Christmas recipe using fresh cranberries for a simple side dish or dessert.
- 1 pound Fresh cranberries
- 2 cups Sugar
- 1 box (20 oz size) crushed pineapple, drained
- 1 package (16 oz. Size) Mini Marshmallows
- 1 cup chopped pecans
- 1 pint Heavy whipped cream
Put the cranberries in a large food processor or blender. Pulse until the cranberries are finely ground.
Pour the cranberries into a large container and stir in the sugar. Cover and refrigerate the mixture overnight.
The next day, add drained crushed pineapple, mini marshmallows and chopped pecans.
In a chilled bowl, add the heavy whipped cream. Using an electric mixer, beat the cream until stiff peaks form. Gently fold the whipped cream into the sweet cranberry-marshmallow mixture.
Refrigerate until ready to serve.
