Ingredients
- 2 Yellow corn tortillas
- Salt and pepper
- 2 Medium to large eggs
- 1 Lawyer
- 1 Lime, Juice
- 1 teaspoon garlic powder
- ¼ cups Tomato sauce
- 2 tablespoons Diced red pepper
- 1 tbsp Diced red onion
- 2 tablespoons Shelled hemp seeds
Preparation
Preheat the oven to 425ºF.
Place corn tortillas on baking sheet and spray with cooking spray. Sprinkle with salt and pepper. Bake (middle rack) for 6 minutes.
Heat a medium skillet over medium-high heat on the stove. Crack the eggs and sprinkle with salt and pepper. Cook until cooked through and edges are a little crispy, about 5 minutes.
Slice the avocado and place the filling in a small bowl. Add lime juice, garlic powder, salt and pepper and mash.
Spread some guacamole on each crispy tortilla. Add salsa. Add a fried egg to each, garnish with chopped peppers, diced red onions and hemp seeds. Enjoy!
