Healthy pancakes with banana and oat bran. No added sugar.
- 2 Bananas
- ¼ cups Oatmeal
- ¼ cups Brown Flour
- 1 tbsp Bran
- 1 tbsp Plain Greek yogurt
- ¼ teaspoons Vanilla flavoring
- ½ teaspoon baking powder
- 1 Egg
- Pinch of salt
- ½ teaspoon Butter or coconut oil for cooking
Place the bananas in a large bowl and mash them with a fork. Add remaining ingredients and mix well.
Place about 1/2 teaspoon of butter in a frying pan and spoon 1 heaped tablespoon of mixture per pancake in the pan. Cook over medium heat about 1 1/2 minutes on each side until golden brown. I cooked 3 crepes at a time.
Serve with your choice of fresh fruit and honey.
