- 1 Banana, Puree
- ½ cups Pumpkin puree
- 2 teaspoons Vanilla
- 2 tablespoons Coconut oil, melted
- ⅓ cups Honey
- 1 cup groats
- ¼ cups Ground flax seeds
- ¼ cups Almond powder
- 1 teaspoon Cinnamon
- ½ cups Unsweetened coconut, grated
- ½ cups Dried cranberries
- ½ cups dark chocolate chips
- Pinch of salt
Combine mashed banana, pumpkin, vanilla, coconut oil and honey in a large bowl.
In another bowl, combine the rest of the ingredients. Add the dry ingredients to the banana mixture and stir until well combined.
Place the dough on a baking sheet lined with parchment paper and bake at 350ºF for 12 to 15 minutes, until the cookies are lightly browned. Let cool before serving.
