These healthy breakfast cookies are nutritious and delicious! Perfect for busy mornings when you’re looking for a breakfast on the go!

Preparation: 10 minutes

To cook: 15 minutes

Level: Easy

Serves: 10

Ingredients

  • 1 Banana, Puree
  • ½ cups Pumpkin puree
  • 2 teaspoons Vanilla
  • 2 tablespoons Coconut oil, melted
  • ⅓ cups Honey
  • 1 cup groats
  • ¼ cups Ground flax seeds
  • ¼ cups Almond powder
  • 1 teaspoon Cinnamon
  • ½ cups Unsweetened coconut, grated
  • ½ cups Dried cranberries
  • ½ cups dark chocolate chips
  • Pinch of salt

Preparation

Combine mashed banana, pumpkin, vanilla, coconut oil and honey in a large bowl.

In another bowl, combine the rest of the ingredients. Add the dry ingredients to the banana mixture and stir until well combined.

Place the dough on a baking sheet lined with parchment paper and bake at 350ºF for 12 to 15 minutes, until the cookies are lightly browned. Let cool before serving.
