This healthy avocado egg salad is great for people who don’t eat dairy or just don’t want mayonnaise. It’s packed with healthy fats, complete proteins, and is an easy-to-prepare lunch.

Ingredients
- 2 whole Lawyers
- 4 whole Hard boiled eggs
- 6 set Hard-boiled egg whites
- 1 whole Lemon, juice
- ½ cups Red onion, diced
- ½ cups Cherry tomatoes, diced
- 3 tablespoons capers
- ¼ cups fresh dill
Preparation
In a large bowl, use the back of a fork to mash the avocado. Chop hard-boiled eggs and hard-boiled egg whites.
Add the eggs, lemon, red onion, tomatoes, capers and dill to the bowl with the avocado and toss to combine.
Eat it on its own, in a wrap, with crackers, or on a sandwich for a delicious healthy avocado egg salad.
