Have you ever made jo jos? If not, you should and I have the grilled jo jo recipe just for you! These potatoes are flavorful and a great side dish for the grill! So we start this on the stovetop just to get a little sweetness, but then move it to the grill so we can get that crispy, charred grill taste that we love. Add oil and seasonings and we really have a nice grilled side dish.
Preparation:
To cook:
Level: Easy
Serves: 2
Ingredients
- 2 Potatoes
- 2 tablespoons Cornstarch
- 1 tbsp chili powder
- 1 tbsp Paprika
- ½ teaspoon Cumin
- ¼ cups Olive oil
- Salt and pepper to taste
Preparation
Bring a pot of water to a boil.
While the water is heating, cut each potato into 6 wedges. Add the potatoes to the water and boil for no more than 5 minutes. Test with a fork at 3 minutes. Should still be firm and we don’t want the potatoes to be soft. Remove them before they soften.
Add potatoes and remaining ingredients to a large bowl. To mix together.
Preheat grill to 500ºF. Place the potatoes in a lightly oiled vegetable basket and cook over indirect heat. Check for doneness after 15 to 30 minutes.
Serve.
