Ingredients
- FOR THE CAJUN BLEND:
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- ½ teaspoon dried thyme
- ½ teaspoon Black pepper
- ½ teaspoon White pepper
- 2-¼ teaspoons Paprika
- 1-¼ tsp Sea salt
- FOR SCREWING:
- 4 tablespoons Lime juice
- 2 tablespoons Olive oil
- 2 tablespoons Fresh coriander
- 1 teaspoon Red pepper flakes
- Salt and pepper to taste
- FOR THE SALAD:
- 1 Cucumber
- 1 bunch Tomatoes
- ¼ Red onion
- 1 pound Chicken
- 1 tbsp Olive oil
- 1 ear Corn
- 1 Lawyer
Preparation
Preheat grill to high heat or in a non-stick skillet to medium heat (with olive oil)
Mix seasonings for Cajun mix.
Whip dressing Ingredients.
Dice the vegetables and mix in a bowl.
Cut the chicken breasts in half and place in a pan or dish to season. Brush both sides of the chicken with olive oil and season with the Cajun seasonings
Lower the grill to medium-high and cook the chicken 3 to 4 minutes on each side or until the internal temperature reaches 165 F. Also cook the corn on the grill without the husk, turning it often. It should be ready around or shortly after the chicken.
Cut the corn from the husk and mix it with the other vegetables in the salad. Garnish with avocado and serve with dressing.
