These grilled Aji Amarillo Spicy Red Potatoes will bring lots of flavor to your summer meals. The spices have a wonderful smoky flavor with hints of orange.
- 2 books Red potatoes, diced
- 1-½ ounce, weight (or as needed) Aji Amarillo spice blend, or your favorite seasoning blend
- 2 tablespoons Olive oil
Preheat grill to 400ºF.
In a medium bowl, combine potatoes, spices and olive oil. Lay out a sheet of aluminum foil, then place the potatoes on it. Wrap the aluminum foil so that it is in the shape of a tent. Cook on the grill for about 35 minutes, stirring halfway through cooking.
