Ingredients
- 1 cup Unsweetened coconut milk
- 1 cup Frozen pineapple chunks
- 1-½ cup Greens, unwrapped
Preparation
Add the ingredients to a blender in the order listed. Blend, starting at low speed and gradually increasing, until completely smooth with no visible bits of greens. The consistency should be quite thick, but for an even frothier smoothie, add a few ice cubes, a few extra pineapple chunks, or a few frozen banana chunks.
While some smoothies don’t keep well in advance, this one does! Refrigerate it for up to 24 hours, shaking or stirring before drinking.

2. I like to use homemade coconut milk – it’s very flavorful without any additives (see the how to link in the blog). I strain mine through a mesh strainer – no cheesecloth or napkins, as it will be blended into a smoothie anyway. Feel free to substitute any coconut milk drink or canned coconut milk (full or light) in the smoothie. Canned will provide the most piña colada-like results.
