Green Goddess Pesto Pasta Salad.

Ingredients
- 250 grams Brown rice pasta swirls or shells
- 350 grams Zucchini, thinly sliced lengthwise into strips
- 1-½ tbsp (filled) Basil Pesto
- ½ Lemon Or Lime, Zested
- 2 tablespoons Lemon juice
- 2 tablespoons Olive oil
- Salt and black pepper to taste
- 1 cup Fresh arugula, coarsely chopped
- 4 Spring onions, thinly sliced
- ¼ cups Fresh parsley, chopped
- 2 tablespoons Chopped chives
Preparation
Bring water to boil in a large saucepan and follow package directions for cooking pasta. Once the pasta is cooked, drain it and let it cool.
In a large skillet over medium heat, cook the zucchini on both sides until tender and just beginning to brown.
Place the pesto, lemon zest, lemon juice, olive oil, salt and black pepper in a bowl and mix. Add all the other ingredients with the pasta and mix well.
