Grapefruit with Grilled Almonds, Black Rice and Green Peas
- 1 cup Black Rice
- 2 cups Almond milk
- 1 cup Green split peas
- ½ cups Crushed almonds, toasted
- 2 tablespoons Maple syrup
- 4 whole Grapefruit, Sliced
Boil rice in almond milk until tender, about 30 minutes. Boil split peas in water until tender, about 30 to 45 minutes.
Preheat a frying pan and add the maple syrup to the toasted almonds. Stir until caramelized.
To serve, use a large cookie cutter and add rice. Press until firm. Add the peas and also press them into the cookie cutter.
Put slices of grapefruit around the rice and peas and sprinkle almonds on top.
