Granola with Almonds, Walnuts, Cranberries and Goji Berries
- 2 cups Jumbo rolled oats
- 1 cup Almonds, crushed
- 1 cup Crushed nuts
- 2 tablespoons Extra virgin olive oil
- ½ teaspoon vanilla powder
- 1 dash Sea salt
- 2 tablespoons Maple syrup
- ½ cups Dried cranberries
- 2 tablespoons Dried goji berries
Preheat the oven to 300°F (150°F).
Combine rolled oats with walnuts in a large bowl.
In another cup, mix the oil with the vanilla, salt and maple syrup. Add to oats and mix with hands until evenly distributed.
Put baking paper on a baking sheet. Spread the granola on top. Toast the granola for about 10 minutes in the oven. Remove from oven and stir in berries.
Allow to cool completely before transferring to a storage container.
Serve with fortified almond milk.
