Gibanica is one of the most famous Balkan dishes. It’s so sweet and cheesy, perfect for breakfast!

Ingredients
- 10 whole Eggs
- 220 grams Cream cheese
- 1000 grams Salted cottage cheese
- 500 grams Phyllo sheets
- 220 grams Unsalted butter, melted
Preparation
Preheat the oven to 350°F (180°C). Grease a 13 x 9 inch pan and set aside.
For filling, in a large bowl, beat eggs until frothy. Add the cream cheese and whisk well. Then add the cream cheese and stir everything together.
Place 2 phyllo sheets in a pan. Pour 2 tablespoons of melted butter on the dough and using a brush spread evenly. Take the next 2 phyllo sheets and put them in the bowl with the cheese mixture, making sure the sheets absorb enough of the mixture (this is really important!). Put on top the first 2 leaves that are already in a pan. If there isn’t enough cheese, just use a tablespoon to add more. Repeat the process until 2 leaves remain. Lay the last 2 sheets on top.
Pour the rest of the butter on top and spread evenly. Bake uncovered for about 1 hour.
Once cooked, let cool for 15 minutes then cut into square pieces. Serve and enjoy!
