Ingredients
- 4 cups Breadcrumbs
- 2 tablespoons Fresh oregano, chopped
- 2 tablespoons Fresh basil, chopped
- 2 tablespoons Fresh parsley, chopped
- 3 cloves minced garlic
- ½ teaspoon Salt
- ½ teaspoon Pepper
- 6 tablespoons Butter without salt
- 6 Large tomatoes, thinly sliced
- 2 tablespoons Olive oil
- ¼ cups Parmesan-Reggiano
Preparation
Preheat the oven to 375ºF.
Combine breadcrumbs, oregano, basil, parsley, garlic, salt and pepper in a bowl. Melt the butter and slowly stir into the breadcrumb mixture.
In a 2-quart baking dish, place half the breadcrumbs and bake for 10 minutes. Remove from oven, layer tomatoes, drizzle with olive oil, then layer with remaining breadcrumb mixture. Top with cheese. Bake uncovered for an additional 15 minutes.
