Easy Garlic Chicken combines lightly breaded chicken with golden mushrooms and garlic for a quick delicious comfort food dinner. Easy enough to make during the week but chic enough for company.

Ingredients
- ⅓ cups All purpose flour
- ½ teaspoon Freshly ground black pepper
- 1 teaspoon Salt
- 2 Large boneless, skinless chicken breasts, halved lengthwise
- 2 tablespoons Vegetable oil, divided
- 1 tbsp Butter
- ten Large button mushrooms sliced
- 4 cloves minced garlic
- 1-½ tsp Dried parsley
- ½ cups Low sodium chicken broth
- 1 cup Heavy whipped cream
Preparation
Combine flour, pepper and salt in a deep plate. Dip the chicken breasts in the flour mixture.
Heat 1 tablespoon vegetable oil in a skillet over medium heat. Cook chicken breasts until browned on both sides. Remove to a plate. Place in the oven over hot heat, uncovered.
Add the butter and the remaining tablespoon of oil over medium-high heat. Add mushrooms and cook until golden brown, stirring frequently, about 8 minutes. Reduce heat to medium-low. Add garlic and parsley. Cook 1 minute, stirring frequently.
Pour in the chicken broth and heavy cream. Let simmer for 10 minutes. Return chicken to skillet and simmer until heated through, about 5 minutes.
