You’d never know there’s a hidden vegetable in these amazing fudgy zucchini brownies! They taste so decadent and are really simple to make.

- 2 cups All purpose flour
- ½ cups Cocoa powder
- 1-½ tsp Baking soda
- 1 teaspoon Cinnamon
- ½ teaspoon salt
- 1-¼ cup Dark brown sugar
- ½ cups Canola oil
- 1 teaspoon Vanilla extract
- 1 whole Zucchini, grated
Preparation
Preheat oven to 350°F and spray an 8×8 baking dish well with cooking spray.
Whisk flour, cocoa powder, baking soda, cinnamon and salt in a bowl. In another large mixing bowl, mix the sugar, oil and vanilla well. Slowly stir the dry ingredients into the wet ingredients until you have a crumbly, almost dry mixture. It’s normal. Then stir in the zucchini until the batter begins to soften and thicken.
Transfer the batter to the baking dish and make sure it is in an even layer. Bake the platter for about 30 minutes, until the edges are just starting to crisp and the center is cooked through. Let cool completely for 1 hour, then cut and serve! Enjoy!
