- 1 cup Brown rice (white would also work)
- 1-½ cup Boiling water
- 1-½ cup Milk
- 1 tbsp Honey or sweetener of your choice
- ½ teaspoon Vanilla extract
- 7 ounces, weight Fruit of your choice
- ½ cups whipped cream (optional)
Preparation
Pour the rice, boiling water, milk and a few drops of honey and vanilla into a medium saucepan. Cook over medium-low heat, stirring occasionally. Don’t let the rice stick to the bottom of the pan because it can burn quickly if it does and trust me, burnt rice doesn’t taste nice.
Continue to cook until you only see a little liquid on top. Turn off the heat and place the lid on top of the pan. Leave it until the rice soaks up all the liquid.
Meanwhile, wash and dry the fruit you want to use, then cut it as small as you want. I used strawberries. Whip cream, if using, and set aside.
Check the rice if it is well cooked. It should be soggy and soft. (If it’s too hard, you can pour a little more milk into the pan and leave longer.)
When the rice is cooked, begin to divide it into the bowls. I usually form layers: rice, fruit, rice, fruit, whipped cream, fruit.
When you’re done, put in the fridge to chill or serve immediately.
