This fresh and creamy salad is the perfect make-ahead side dish. Always quick to disappear at barbecues and potlucks!
- 1 whole Lemon
- 1 whole Orange
- 1 cup Sugar
- 1 tbsp Cornstarch
- 1 cup Mini Marshmallows
- 1 box (16 Oz. Size) Acini De Pepe
- 2 cans (8 oz size) Crushed pineapple, drained, juice reserved
- 2 cans (8 oz size) Tangerines
- 1 container (8oz size) Cool Whip
Cook the acini de pepe according to the instructions on the box. Drain and reserve.
Juice lemon and orange and pour into a 1 cup measuring cup. Add pineapple juice (from canned pineapple) until you have 1 cup total juice.
In a medium saucepan, combine the sugar, juices and cornstarch, stirring frequently until the sauce thickens. Mix the sauce with the acin de pepe. Cover and refrigerate.
Before serving, stir in drained pineapple, tangerines, marshmallows and Cool Whip.
