Foolproof way to get crispy potatoes for breakfast (or anytime)! Minimal oil and skill required and delicious results.
- 1 pound Potatoes (Red, Gold Or Russet)
- 2 tablespoons Canola oil
- Everyday Seasoning or Mrs. Dash
Wash the potatoes thoroughly and prick them several times with a knife. Wrap in a damp paper towel and microwave until tender, but not mushy. I cook them at 3-5 minute intervals, all at once, depending on their size, and check them at each interval, turning them over and removing any that are cooked.
Once all the potatoes are cooked until tender (but still holding their shape), cut them into pieces of the desired size.
Heat the oil in a nonstick or cast iron skillet over medium heat. Test a potato in oil to see if it gives you a good sizzle. If so, add potatoes to the pan, sprinkle with daily seasoning. Cook on all sides until golden brown, about 10 minutes.
Salt once you remove them from the pan. Enjoy!
