This rich and creamy peppermint hot chocolate is an undeniable mood booster!
- 1 cup Filtered water
- 2 bags (Single serving) Peppermint tea
- 1 cup Coconut milk
- 1 tbsp coconut sugar
- 1 tbsp raw cocoa powder
- 2 tablespoons Dark Chocolate 72%
- FOR THE PEPPERMINT WHIPPED CREAM:
- ½ cups Organic whipped cream (or coconut cream)
- 6 drops Peppermint extract
- ⅛ teaspoons Honey
Steep the peppermint tea bags in water for 5-10 minutes.
Combine peppermint tea, coconut milk, coconut sugar and cocoa powder in a saucepan. Cook over medium heat, whisking occasionally, until sugar and cocoa powder dissolve and milk is hot. Do not boil. Whisk the chocolate pieces until they are melted.
Pour into mugs and top with whipped cream.
For the peppermint whipped cream:
Pour the organic whipped cream into a glass container. With an immersion blender, start blending the cream. When it begins to thicken, add the peppermint extract and honey.
