Ingredients
- FOR THE SALAD:
- Olive oil, as needed
- 1 Gluten-free pita, cut into cubes
- 2 Ripe tomatoes, sliced
- ½ Cucumber, diced
- 1 Pepper, sliced
- ½ Thinly sliced red onion
- Salt and pepper, for seasoning
- FOR SCREWING:
- 1 clove minced garlic
- 2 tablespoons Lemon juice
- 1 tbsp Olive oil
- 1 tbsp Fresh parsley, chopped
Preparation
Heat a drizzle of olive oil in a skillet over medium heat. Fry the pita squares until golden brown. Let cool.

Place the tomato, cucumber, pepper, onion and pita in a bowl. To incorporate dressing and season with salt and pepper.
