- 2 cups Okra, sliced
- ½ cups Water
- ¼ whole Red onion, thinly sliced
- 1 teaspoon Olive oil
- Salt and pepper to taste
- ½ tablespoon Butter
- 1 cup Whole cherry tomatoes
- 2 whole Eggs
Wash the okra, cut both ends and cut it into thin rings.
Heat the water in a small pan and add the okra, onion, oil, salt and pepper to taste. Cook for 10 minutes.
Add the butter and the cherry tomatoes, cook for 3 minutes. Add the eggs, lower the temperature to medium-low and cook for about 2 to 3 minutes or until the eggs are cooked.
