All the best savory breakfast flavors come together in these amazing breakfast bombs with sausage, eggs and cheese wrapped in cookies that mimic everything bagels do!

Ingredients
- 5 tablespoons Butter, divided
- 12 ounces, weight Turkey breakfast sausage links, casings removed
- 8 whole Eggs
- ¼ cups Half half
- ½ teaspoon Salt
- ½ teaspoon Dried tarragon
- 1 pinch Black pepper
- 1 tbsp Chive Whipped Cream Cheese
- 1 box (16 1/3 oz. size) Large Southern Style Cookies
- ½ cups Grated cheddar cheese
- 1 teaspoon poppy seeds
- 1 teaspoon Sesame seeds
- 1 teaspoon dried onion
- 1 teaspoon garlic powder
- Ketchup or HP sauce, for dipping
Preparation
Preheat oven to 375ºF and line a baking sheet with a silicone mat. Melt 4 tablespoons of butter in the microwave and set aside.
Take the remaining tablespoon of butter and heat it in a large, preferably nonstick, skillet over medium-high heat. Cook the sausages in it, breaking them up into crumbs, until cooked through and lightly browned. While cooking, whisk the eggs, half and half, salt, tarragon and black pepper well in a bowl. When the sausage is done, pour the egg mixture over it and stir fairly constantly until it’s fully cooked into fluffy, fluffy scrambled eggs. Remove from the heat and stir in the cream cheese for extra flavor and a creamy texture.
Now it’s time to form the breakfast bombs. Take the raw cookies and flatten each into 1/4 inch thick discs. Evenly distribute the sausage scrambled eggs in a mound in the center of each disk, then evenly sprinkle the cheddar cheese on top of each mound of eggs. Stretch the sides of the cookie disc up and over the filling and pinch firmly to enclose it, then place each formed bombshell on the sheet tray, seam side down. Brush them generously with melted butter.
Mix the poppy seeds, sesame seeds, dried onion and garlic powder and generously sprinkle each bomb with this mixture to mimic a whole bagel. Bake for 20-22 minutes, until golden on the outside. Leave to cool for 5 minutes, then serve immediately lukewarm with ketchup or HP sauce for dipping!
