This sweet and savory granola is so addictive and makes for a great breakfast!

Ingredients
- 2-¾ cups Oatmeal
- 1 cup Shelled pistachios (or pecans)
- 1 cup Unsweetened coconut chips
- ⅓ cups pumpkin seeds
- 1 tbsp Kosher salt
- ½ cups light brown sugar
- ⅓ cups real maple syrup
- ⅓ cups extra virgin olive oil
- ¾ cups Dried sour cherries, chopped
Preparation
Preheat oven to 300ºF. Line a large baking sheet with parchment paper.
In a large bowl, combine rolled oats, pistachios (or pecans), coconut, pumpkin seeds and salt.
Over low heat, heat the sugar, syrup and olive oil in a small saucepan until the sugar is just dissolved. Stir the liquids into the oat mixture, making sure to coat all the dry ingredients.
Spread the granola mixture on a baking sheet. Bake until dry and lightly browned, 40 to 45 minutes, stirring the granola a few times during baking. Remove the granola from the oven and stir in the dried sour cherries. Allow to cool to room temperature before transferring to a storage container.
