Ingredients
- 1-½ cup Pitted Medjool dates, tightly wrapped
- ¾ cups Natural and creamy peanut butter
- 1 teaspoon Coconut Flour
- ½ teaspoon Sea salt (optional)
- 4 ounces, weight Dark chocolate, coarsely chopped
- ¾ teaspoons coconut oil
Preparation
In a high power blender or food processor, blend the pitted dates and peanut butter until smooth, with only a few chunks remaining. Scrape sides as needed to ensure everything is well incorporated. Add coconut flour and sea salt (if using) and beat again until smooth.
Use a tablespoon to scoop out portions of dough and roll it into a tight ball with your hands. The mixture will be crumbly, but should stick together with some force. If it’s not sticky enough, add another teaspoon or two of peanut butter. Flatten the balls into disks about ½ to ¾ inch thick and arrange them on a baking sheet or cutting board. Refrigerate for 1-2 hours until firm.
Melt the chocolate and coconut oil in a double boiler until smooth. Remove the bites from the refrigerator and drizzle the top with chocolate. You can also half dip them in melted chocolate if you want to mix it up a bit.
Refrigerate or freeze until chocolate has set. Serve immediately, keeping in mind that the longer the bites stay at room temperature, the more the chocolate drizzle will melt. Store them in an airtight container in the fridge or freezer. Enjoy!
