These easy Peanut Butter Oatmeal Banana Cookies use only 5 simple ingredients and are gluten-free and vegan! A healthy treat for kids and adults!

Ingredients
- 1 cup Banana, Mashed (240g Or About 2 Very Large Bananas)
- ½ cups Creamy natural peanut butter, plus extra for drizzling, if desired
- ¼ cups coconut sugar
- 18 tablespoons (packaged, 115g) Quick Cooking Oats (unrolled, gluten-free if needed)
- ¼ cups Roasted peanuts, salted, coarsely chopped
Preparation
Preheat oven to 325ºF and line a baking sheet with parchment paper or a silpat.
In a large bowl, whisk banana, peanut butter and coconut sugar until well blended. Add the rolled oats and stir until well combined. Finally, stir in the peanuts. The dough will be a little wet and sticky; it’s normal.
Use a cookie scoop to drop by heaping 1 tablespoon balls onto the prepared pan and use a fork to press them about 1/2 inch thick, making sure to pack the edges together so the cookies will hold their shape.
Bake until edges are golden brown and top is firm and springy, about 25 to 30 minutes. Let cool completely on the sheet.
Drizzle with peanut butter, if desired, and devour!
