This recipe only takes 25 minutes to make. It is vegetarian and perfect for breakfast, lunch or dessert.

- 3 tablespoons Butter
- 3 Eggs
- ⅔ cups Flour
- 1 Pinch of salt
- ¾ cups Buttermilk
- 2 tablespoons raw honey
- ¾ teaspoons Cinnamon
- 1 tbsp pure vanilla extract
Preparation
Heat the oven to 400ºF (200ºC).
In a cast iron skillet, add the butter and put in the hot oven to melt it.
Meanwhile, add the eggs, flour, salt, buttermilk, honey, cinnamon and vanilla to a blender and blend until smooth.
Once the butter has melted, pour the batter into the pan and return to the oven. Bake for 15 to 18 minutes, until the crepe is puffed and golden on the sides.
Drizzle with additional honey or maple syrup and add toppings of your choice.
