You don’t even need a mixer to make these easy chocolate cupcakes! Just mix and bake, perfect for your Valentine’s Day!

- 1 cup All purpose flour
- ½ cups Cocoa powder without sugar
- 1 teaspoon baking powder
- ¼ teaspoons Baking soda
- ¼ teaspoons Fine sea salt
- 1 teaspoon Chai spice mix (optional)
- ½ cups Granulated white sugar
- ½ cups Light brown sugar, packaged
- ⅓ cups Vegetable oil
- ½ cups Buttermilk
- ⅓ cups Hot water or hot coffee
- ½ tablespoon Vanilla extract
- 1 big egg
Preparation
Preheat oven to 360°F (180°C) and line a 12-cup cupcake pan with liners.
Add all the dry ingredients (flour, cocoa powder, baking powder, baking soda, salt, chai spices (if using) to a large bowl and whisk until well combined.
Add all wet ingredients (sugar, oil, buttermilk, hot water or coffee, vanilla, egg) to a medium bowl or measuring cup and whisk until smooth. Add the wet ingredients to the dry ingredients and stir (no whisk, use a wooden spoon or spatula!) until combined. The dough will be thin.
Divide the batter between the prepared cupcake pans. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let cool in pan for 5 minutes, then remove to a cooling rack to cool completely before adding frosting.
