Delicious easy breakfast filled with cheesy goodness that will fill you up!
- 3 Potatoes
- Olive oil, as needed
- 4 Eggs
- Salt and pepper to taste
- 1 cup Grated cheese
- 2 Green onions, sliced
Peel the potatoes and cut them into cubes. Fry in a pan with olive oil until golden brown.
Make 4 wells in the fried potatoes and put an egg in each. Sprinkle salt and pepper all over. Cover the pan with a lid and cook the eggs for about 5 minutes.
At the last minute of cooking, add the cheese and green onions and more salt and pepper if needed.
