This easy one skillet blackened chicken is just the ticket for those who love their chicken flavorful yet tender and juicy. This Cajun recipe is simple enough for the novice chef and is ready in about 20 minutes.

Ingredients
- ½ tablespoon smoked paprika
- ½ teaspoon Cayenne pepper (this is the hottest so you can tame it if need be)
- ½ teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ tablespoon onion powder
- ½ teaspoon Freshly ground black pepper
- ¼ teaspoons Dried oregano
- ¼ teaspoons Salt
- 2 Large chicken breasts, halved lengthwise
- 1 tbsp Canola oil, and more for brushing chicken
Preparation
Combine smoked paprika, cayenne pepper, dried thyme, garlic powder, onion powder, black pepper, oregano and salt in a resealable bag. Shake to combine.
Lightly brush chicken breasts on both sides with oil or spray with cooking spray. Use your hands to evenly distribute the seasonings over the chicken.
Heat 1 tablespoon canola oil in a nonstick skillet over medium to medium high heat until smoking. Cook chicken until browned (almost black) on both sides and cooked through, about 5 minutes per side. Remove from skillet. Cover with a sheet of aluminum foil and let rest for 10 minutes.
