Enjoy these Easy Bacon breakfast cups filled with potatoes and sausage, wrapped in bacon and topped with an egg.

Ingredients
- 1 package (12 oz size) Bacon
- 1 pound Minced pork sausage
- 4 cups Tater Tots, thawed
- 12 whole Medium eggs
- Hollandaise sauce, for serving (optional)
Preparation
Preheat the oven to 350ºF. Place a cooling rack over a long cooking rack. Spread the bacon lengthwise on the cooling rack. Bake for 12 to 15 minutes. The bacon should be cooked but still a little soft. Leave to cool before filling in a cupcake tin.
While the bacon cooks, use a medium sauté pan and cook the ground pork sausage over medium heat. Cook until brown and use a spatula to break it up. Drain excess fat.
Using a potato masher, mash the tater tots and add the ground pork sausage to the tater tots. Stir to combine.
Spray a cupcake liner with nonstick spray. Take a single piece of bacon and wrap it inside a cupcake pan. Use your hands to stuff the inside of the bacon with the potato and sausage mixture. Use your thumb and leave an indentation in the middle of the potato mixture. Crack an egg in the middle of the potato mixture.
Bake for 20 minutes or more, depending on egg preference. Leave to cool for 5 minutes and carefully remove from the cupcake tin. Place on a serving platter. Serve topped with Hollandaise sauce, if desired.
