In this article I will show you how to make the best chocolate filled cupcakes for Easter or any other occasion. They’re both easy and fun to make, and they’re the perfect treat for kids.

Ingredients
- FOR THE CUPCAKES:
- 8 ounces, weight Self-rising flour
- 4 ounces, weight Caster sugar
- 1 teaspoon Salt
- 15 tbsp, 2-⅔ tsp, ¼ pinch Milk
- 2 large eggs
- 7 tbsp, 2 tsp, 5-⅓ pinches Vegetable oil
- ten Small Easter Eggs
- FOR DECORATION:
- 4-½ ounces, weight Softened butter
- 3-⅝ ounces, weight Icing sugar
- Green food coloring
- 3-⅝ ounces, weight Grated coconut

FOR THE CUPCAKES:
Preheat the oven to 175°C (350°F). Take your muffin tin, then place a muffin tin in 10 holes of the muffin tin. Use cooking spray to grease the inside of each muffin cup so you can easily lift them off the muffins once they are baked.
Add the self-rising flour, caster sugar and salt to a large clean bowl and mix well.
Whisk milk, eggs and vegetable oil in another bowl. Pour the wet ingredients with the dry ingredients and beat together until smooth.
Scoop or pour muffin batter into muffin cups, filling them 3/4 full. Push an Easter egg into the center of each raw cupcake.
Bake the cupcakes for 30 minutes. Be sure to place the pan on the middle rack of the oven. Test to see if the cupcakes are cooked by inserting a skewer into them. If the skewer comes out clean, the muffins are done.
Set muffins aside to cool. Put them in the fridge if you want to speed up the cooling process.
TO DECORATE :
Use an electric mixer to beat the butter in a mixing bowl for a few minutes, until nice and pale. Add the icing sugar little by little, beating after each addition. Once all the icing sugar is added, add the green food coloring and beat. Spread the green buttercream on the cupcakes.
Put the grated coconut in a bowl. Add 1 teaspoon of green food coloring and stir until all of the grated coconut is green.
Dip the buttercream side of the cupcake toppers into the green shredded coconut so the coconut sticks to the frosting. You should get a frosting that looks like grass.
