Rich and chewy black bean brownies topped with melty caramel and sea salt. Vegan, gluten-free and grain-free!

- 1 box (size 15 oz) black beans, drained and rinsed
- 2 tablespoons Coconut oil, plus more for greasing
- ½ cups Melted and cooled dark chocolate
- ¼ cups Oatmeal
- ½ cups Cane sugar
- 1 whole flax egg
- ½ teaspoon Baking soda
- 6 set Caramel candies, halved
- 1 bunch Pieces of dark chocolate, for garnish
- 1 pinch Sea salt for garnish
Preparation
Preheat oven to 350ºF and lightly coat an 8×8 pan with oil (or butter, if not vegan).
In a blender or high-powered food processor, combine black beans, coconut oil and dark chocolate. Mix until smooth, then add the flour, sugar, flax egg and baking soda. Pulse until just combined.
Transfer the batter to the 8×8 pan and bake for 20-22 minutes. Sprinkle caramel pieces and dark chocolate pieces on top. Bake for an additional 1-2 minutes. If an inserted toothpick comes out clean, remove the brownies from the oven and let cool before serving. Sprinkle with sea salt.
