Dirty Rice is a delicious combination of ground pork, ground beef, finely chopped chicken livers, rice, onions, celery, green pepper, garlic, and Cajun seasoning. It’s a complete meal that can be cooked in about twenty-five minutes. It’s so full of flavor and absolutely delicious!

Ingredients
- 1 cup White rice
- 1-½ cup Low sodium chicken broth, divided
- 1 cup Water
- ½ pound Ground beef
- ½ pound Minced pork
- ⅔ cups Chopped chicken livers (optional)
- 1 Small onion, diced
- 2 rods Celery, diced
- ½ Green pepper, diced
- ½ Red bell pepper, diced
- 2 cloves minced garlic
- 2 teaspoons Cajun seasoning
Preparation
Bring the rice, 1 cup chicken broth and water to a boil. Reduce to simmer, cover and cook 15-20 minutes or until liquid is absorbed. Remove from the heat and stir with a fork.
In a large Dutch oven or heavy pot over medium heat, brown the ground beef and ground pork. Halfway through the browning process, add the chopped chicken liver (if using), onion, celery and peppers. Cook until the meat is browned and the onions are soft. Reduce heat to low. Add garlic and Cajun seasoning and cook an additional 1 minute.
Add the cooked rice to the pan with the meat and vegetables. Stir in the remaining 1/2 cup of chicken broth. Serve quickly.
