- 2 pounds Ground chicken
- 6-½ teaspoons Yellow curry powder, divided
- ½ cups Breadcrumbs
- 1 container (5 1/3 oz. size) Plain Greek yogurt, divided
- 1 tbsp Dijon Mustard
- 1 tbsp Fresh cilantro, coarsely chopped
- 1 whole Onion, finely diced
- 1 pinch salt and black pepper
- ½ teaspoon garlic powder
- 2 whole Eggs
- ½ Lemon, zested
Preparation
Preheat oven to 375ºF and line a baking sheet with aluminum foil.
Combine chicken, 6 teaspoons curry powder, breadcrumbs, 1 tablespoon Greek yogurt, Dijon mustard, cilantro, onion, salt, pepper, garlic powder and eggs in a large mixing bowl. Mix everything together until well blended.
Invert the mixture onto the tray and form a tight loaf. Combine the remaining Greek yogurt, remaining 1/2 teaspoon curry powder, and lemon zest in another bowl and spread it over the top of the bread.
Bake the chicken bun for about 50 minutes, until bubbly on top, slightly crispy on the outside and cooked through. Let rest for a few minutes, then slice and enjoy with your favorite sides!
