Beautiful chicken curry skewers that taste great and look great! Made with natural curry yogurt, freshly squeezed lemon juice and chopped mint. A real winner, and quite healthy too!

Ingredients
- 100 grams small new potatoes
- 50 grams Low fat natural yogurt
- ¼ teaspoons minced ginger
- ¼ whole Lemon, juice and zest
- ¼ teaspoons turmeric or curry powder
- 1 clove minced garlic
- 1 pinch Chili flakes
- 4 oz Chicken breast
Preparation
Add 2 wooden kebab skewers to a tall glass filled with water. Preheat the oven to 180°C (350°F).
Put the new potatoes in a bowl of cold water. Bring to a boil and cook for 10 minutes. If you have baked potatoes before, skip this step.
Combine yogurt, ginger, lemon juice and zest, turmeric or curry powder, garlic and chili flakes in a bowl. Mix well.
When the potatoes are cooked, drain and let cool slightly for a few minutes. Add chicken and cooled potatoes to yogurt mixture and coat well.
Add chicken and potatoes to skewers, alternating. Place on a baking tray lined with baking paper and place in the middle of the oven. Cook, 10 to 15 minutes, until the chicken is cooked through.
Serve with a crunchy green salad!
