These crispy mashed potatoes are perfect when dipped in a creamy mint and feta dip. Mashed potatoes are so easy to make, plus they’re a great side dish to any meat or fish!

Ingredients
- 500 grams new potatoes
- 3 tablespoons Oil, Split
- Salt and pepper to taste
- FOR THE DIP:
- 100 grams Feta cheese, crumbled
- 10 grams Finely chopped mint
- 5 tablespoons Natural yogurt
- 2 tablespoons Lemon juice
- Salt and pepper to taste
Preparation
Bring a pot of water to a boil and cook the potatoes for about 20 minutes, until completely tender.
Preheat the oven to 200°C (390°F).
Drain the water and transfer the potatoes to a baking sheet. Toss the potatoes in 2 tablespoons of oil.
Use a fish slicer or potato masher to mash the potatoes until they are about 1cm thick. Arrange the potatoes on the baking sheet so that they are evenly spaced and not touching. Sprinkle them with salt and pepper and the remaining tablespoon of oil. Bake for 30 minutes.
To make the mint and feta dip, combine crumbled feta, chopped mint, yogurt and lemon juice in a bowl. Use a fork to break up the feta cheese if you prefer a smoother sauce. Alternatively, you can blend the dip in a food processor for a completely smooth sauce. Taste and season with salt and pepper as needed.
Potatoes are done when golden brown and crispy around the edges. Serve them with a bowl of feta dip and enjoy!
