This easy and healthy vegetable dip uses only 4 ingredients! It’s perfect for dipping raw or grilled veggies, and it’s keto and low carb.
- FOR THE FETA DIP:
- 6 ounces, liquid Crumbled Feta
- 3 ounces, weight Softened cream cheese
- 1 tbsp Lemon juice
- ¼ cups Half half
- FOR THE GRILLED VEGETABLES:
- 4 Zucchini
- 2 tablespoons Avocado oil
- 2 tablespoons Soya sauce
- 1 teaspoon smoked paprika
- ½ teaspoon Salt
- ½ teaspoon Pepper
Add all the ingredients for the feta dip to a food processor or blender and blend until combined and creamy.
Cut the zucchini in half lengthwise, then in half again. You can also cut them into rounds or 1/4 inch thick steaks.
Add zucchini and all other ingredients to a large zip-top plastic bag or large bowl and toss to combine. Leave to marinate for 30 minutes.
Prepare the grill over medium-high heat and grill the vegetables until tender and slightly charred, about 7 minutes.
