Ingredients
- 2 tablespoons Olive oil
- 2 cloves minced garlic
- 1 Onion, diced
- 225 grams Mushrooms, sliced
- 2 Carrots, sliced
- 2 Chicken breasts, diced
- 1 litre chicken stock
- 250 milliliters Dairy-free cream
- 1 teaspoon Thyme
- Salt and pepper to taste
- 100 grams Rice
Preparation
Add olive oil to a large skillet over medium heat. Stir in garlic, onion, mushrooms, carrots and chicken. Sauté for 5 minutes.
Pour in the chicken broth, cream, thyme and seasoning. Bring to a boil and add the rice. Simmer until chicken is cooked through and rice is tender, about 12 to 15 minutes.
