Lovely dairy free gluten free creamy tomato soup.
- 2 tablespoons Olive oil
- 2 Chopped onions
- 2 cloves minced garlic
- 2 teaspoons Oregano
- 2 teaspoons Basil
- 900 grams Fresh tomatoes, chopped
- 400 grams Canned chopped tomatoes
- 1 teaspoon Sugar
- 400 milliliters Vegetables soup
- 250 milliliters Dairy-free cream
Place the olive oil in a large saucepan over medium heat. Add onion, garlic, oregano and basil. Sauté for 5 minutes.
Stir in fresh and canned tomatoes and sugar. Pour in the vegetable broth. Cover the pot with a lid and bring to a boil. Let simmer for 20 minutes.
Blend the soup. Stir in the dairy-free cream and heat for a few minutes.
